Bacon, avocado and walnut salad

Main ingredients
130 g pack lardons
120 g bag baby leaf salad
1 medium avocado, quartered, stoned, peeled and sliced
1 shallot, finely chopped
4 tbsp. red wine vinegar
50 g walnuts, roughly chopped
4 tbsp. olive oil
  1. Dry fry the lardons and shallot in a frying pan over a medium heat until golden.
  2. Meanwhile, arrange the baby leaf salad and the avocado slices on four individual serving plates.
  3. Add the walnuts, olive oil and vinegar to the frying pan and continue to cook for 1 min.
  4. Season with salt and freshly ground black pepper.
  5. Tip the lardons, walnuts and dressing over the salad to serve.
